Shish taouk / Chicken Kebobs….

A kebab is a skewer with meat and vegetables and is usually grilled. It can contain lamb, beef, fish, or chicken, as well as vegetables like green peppers, onions and mushrooms.

My personal favorite is grilled chicken kebabs marinated in yogurt with mild spices ..

Today I am bringing one of my favorite kabobs to Angie’s Fiesta Friday ….

Ingredients:

1 cup plain thick yogurt ( you can use Greek yogurt too )
2 tablespoons olive oil or oil of your choice
2 teaspoons paprika
1/2 teaspoon cumin powder
1/8 teaspoon cinnamon powder
1 teaspoon crushed red pepper flakes
Zest from one lemon
2 tablespoons freshly squeezed lemon juice.
1-3/4 teaspoons salt
1/2 teaspoon freshly ground black pepper
4 garlic cloves, minced
2 pounds boneless skinless chicken breast , trimmed of any excess fat and cut into large bite-sized pieces. ( you can even use lamb )
1 large red onion, cut into wedges
oil or butter for greasing the grill
8 to 10 (10-inch) wooden or metal skewers ( If using wooden skewers, soak in water at least 30 minutes before using.)

Instructions:

In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
Thread the chicken onto metal skewers, alternating occasionally with the red onions.
Place the kebabs on a baking sheet lined with aluminum foil. Spoon or brush the marinade all over the meat, coating well.
Cover and refrigerate at least eight hours or overnight.
Preheat the grill to medium-high heat and grease the grids .

Grill the chicken kebabs until golden brown and cooked through, turning skewers occasionally, 5 to 8 mins each side . Transfer the skewers to a platter and serve.

Serve kabobs on a bed of rice, pita bread, dipping sauces and a salad.

NOTE :

You can even place all ingredients except chicken in a large, nonreactive bowl and whisk to combine. Add chicken and toss until thoroughly coated. Cover and refrigerate for at least 8 hours or up to 24 hours. Remove from the fridge at least 45 mins before grilling so that they are on room temperature . Thread chicken and onions on the skewers and grill .

    1. Nancy these kabobs have a mild flavor and I really liked the hint of lemon in them . Yellow rice is basic indian fried rice with a pinch of turmeric powder .

  1. Kebabs are usually so great, and this flavouring looks fabulous! I can just smell the chicken cooking on the grill and hear the onions sizzling. I can see this being a staple in my house and it looks very simple to prepare as well. Thanks for bringing it to Fiesta Friday, Shailja!
