This recipe is in continuation of my love for different types of kabobs .
This easy Quinoa with vegetable kabobs can be served with pita bread or on a sandwich bun for a colorful summer dinner along with chutneys and dips of your choice .
For the kabobs we will need :
Quinoa -1/2 cup
1/2 cup mixed vegetables of your choice ( I used carrots ,corns and green peas)
3 boiled and mashed potatoes [ around 1 1/2 cups ]
Cumin powder 1 tsp
Red chili powder 1 tsp or to taste
2 green chillies finely chopped or too taste ( optional)
1 medium onion finely chopped ( optional)
1/2 ” ginger finely chopped ( optional )
Garam masala powder 1 tsp
Dry mango powder 1 tsp
1/4 cup finely chopped fresh cilantro / coriander
Salt to taste
Cook quinoa as per direction on the box ( I cooked 1/2 cup Quinoa in 1 cup of water ) . Once cooked spread the Quinoa in a plate to bring it to room temperature .
In the mean while blanch all the vegetables in boiling water for a few mins. Make sure not to over cook them. ( alternatively you can cook the veggies with Quinoa too)
Add the vegetables, mashed potatoes , cilantro , finely chopped ginger , onion and all the spices to the quinoa and mix well .
Grease your palms with little oil to make medium size patties out of the Quinoa mix . Keep aside .
Heat a pan with enough oil on medium heat to shallow fry the kabobs to a nice golden brown color . Drain the kabobs on a paper towel and serve hot with ketchup , coriander chutney or any other dips of your choice ..
