Goda masala from the Maharashrian cuisine has a unique flavor that cannot be replaced with any other combination of spices. Goda masala is also known as Kala masala or black masala as the spice mixture appears blackish in color. The main distinct ingredients in goda masala are sesame seeds and coconut flakes.
Goda masala is usually added to curries, vegetable dishes, soups, or stews. It is also added to season fish curry, chicken masala and in the marinade for mutton.
Every family from Maharashtra has their own variation of this incredible recipe that runs down generation wise within the family to keep its authenticity intact.
To prepare this masala we will be needing :
2 cups coriander seeds
1/2 cup dry coconut
1/4 cup white sesame seeds
1/4 cup black sesame seeds
2 tbs cumin seeds
3 tsp black cumin seeds
1 teaspoon asafoetida (heeng) (optional )
1/2 Tbsp cinnamon – broken into tiny pieces
1 black cardamom – seeds only
3 dry red chilies
1 tsp turmeric powder
Salt to taste
1/2 Tbsp oil
Roast all the ingredients except coconut and coriander seeds in oil. Keep aside.
Roast coconut and coriander seeds separately without oil.
Now grind all these items together.
Let it cool and store in an airtight container.
