
Kopra Pak – kopra Pak is one of my childhood favorite sweet that is prepared during festivals and special occasions. The taste and the juices that emanate from the fresh coconut give the special richness to this delicacy ..
Ingredients
Fresh Coconut – 2 cups (if using frozen, defrost it first)
Sugar – 1 cup
Milk – ¾ cup + 1 tablespoon
Saffron – few strands (Optional)
Khoya (Mawa) – ¼ cup
Cardamom powder – ½ teaspoon
Almonds or pistachios – few, sliced for garnishing
Method :
Grease 8×8 inch pan with ghee and keep it aside.
Take coconut, sugar and milk in a pan.
Mix well. And turn on the heat on medium.
Cook it for 15-17 minutes while stirring continuously.
Cook it till all liquid evaporates.
Then add cardamom powder and khoya / Mawa
Mix well.
Cook it for 10 minutes while stirring continuously. It should look sticky, dry and lumpy when done.
Transfer to greased pan and spread it evenly. Top it up with sliced almonds or pistachios. Press nuts little bit so it sticks to burfi.
Let it cool completely. Then divide it into 16 equal pieces.
