Aloo Mungphali ki sabzi / Potatoes cooked with crushed peanuts…

During Navratri and other Religious fasts we do not eat to regular and vegetables , So often we make potato curry .This simple potato curry is without onion, garlic and tomatoes. In This recipe I have used lots of cumin seeds along with crushed green chillies , ginger and fresh cilantro which bring wonderful flavor to the dish .

Serve-2

INGREDIENTS-

Potato,boiled -3 medium
Black pepper power 1 tsp optional
Green chili 2 chopped fine
ginger finely chopped 1 tsp
Lemon juice- 1tsp
Cooking oil/ghee- 1 tsp
Cumin seeds/jeera- 1tsp
Salt to taste
1 tbs roasted and crushed peanuts ( optional )
Fresh Cilantro / Coriander for garnishing

Procedure :

Peel boiled potatoes and make small cubes from 1 potato and crush with your palm the other 2 potatoes.
Heat the oil/ ghee in a pan on medium heat. Once hot add cumin seeds. Let them sizzle then add chopped green chilies and ginger and cook for few seconds.
Now add peanuts if using
Add crushed as well as cubed potatoes to the pan & mix well .
Add pepper powder if using
Now add water and salt to taste and let it simmer for 10 mins or till the gravy / curry thickens .
Turn the stove off and Add fresh cilantro / coriander and lemon juice .
Serve hot with barnyard millet / Vrat ke Chawal ..
