In India During religious festivals like navratri lot of Indian families practice the traditional form of fasting where they consume only some of food and fruits.
Here is a quick and easy version of Kadhi that can be served during fasts.
1 medium potato cut into small pieces
2 green chillies chopped ( optional )
1 tbs chopped coriander leaves .
1/4 cup buckwheat / kutto flour or Rajgira / Amaranth flour
water for making thick batter ( around 3/4 cup )
salt and freshly ground black pepper powder to taste.
Oil for frying
Mix flour , potatoes , chillies , coriander leaves and water to make a batter of falling consistency.Add salt and pepper to taste.
Heat oil in a deep bottomed pan.
When hot , deep fry the pakoras in it.
Once the pakories turn brown, strain them and keep them aside.
Ingredients for Kadhi
Yogurt 1 cups
Water chestnut / shingare ka atta 1 tablespoons
Rock salt /sendha namak / Salt to taste
Red chilli powder 1 tsp
Oil / ghee 2 tablespoons
Cumin seeds 1 teaspoon
Ginger green chili paste 2 tsp
Add water chestnut flour, salt & red chilli powder to yogurt and whisk well. Add 2 cups of water and mix well. Keep aside .
Heat ghee / oil in a pan.
Add cumin seeds allow to splutter.
Add ginger-green chilli paste and sauté for 2 minutes.
Add the yogurt , water mixture and cook till it thickens slightly. 8-10 minutes .
Add pakoras and give it 2-3 boils.
Garnish with coriander leaves and serve hot .
