Buckwheat / Kuttu ke aate ki papdi ….

Are you bored of eating potatoes , pumpkin and other common fasting food ? Then look no farther and enjoy this kuttu / buckwheat flour chips / papdi chat . This papdi is Quick to make and some thing different from regular fasting food …

For around 30 Papdis we will be needing

Kuttu ka atta / Buckwheat Flour – 1 Cup
Jeera/Cumin Powder – 1/2 tsp
Sendha Namak/Rock Salt – to taste
Pepper Powder – 1/4 tsp ( optional )
Water – As needed
Oil for deep frying

Method :

In a bowl take all the ingredients listed for papdi, add water in small quantity ie 1 tbsp at a time and knead to smooth dough. This doesn’t required too much of water so be careful. Keep the dough aside for 15 minutes.

Divide dough into 3 parts, take one section of dough, make smooth ball and roll into thin roti. Use a knife to cut into desired shapes
Prick the papdi in 4-5 places with fork or knife so it doesn’t puffs up while frying .
Deep fry in hot oil in small batches until golden brown and drain in kitchen towel.

For Assembly

Prepared Papdi – as needed
Chopped Boiled Potato as needed
Sweet Chutney – As needed
Cilantro Chutney – As needed
Chopped Cilantro – 2 tbs
Yogurt / Curd – as needed

In a plate arrange a few papdi. Keep potato pieces on top of papdi. Add a tsp of beaten yogurt on top of potatoes .
Add green chutney , sweet chutney and garnish with cilantro just before serving ..
