Whats a party without everyones favorite burgers . Presenting my vegetarian version of spicy sliders with spicy mayo , which are very hard to resist, whether you’re a vegetarian or non vegetarian .
Makes around 12 SLIDERS burgers
For the spicy mayonnaise:
1/2 cup mayonnaise
1 teaspoons finely chopped green or bird chili or you can even use chili,flakes
1 clove garlic, minced (about 1/2 teaspoon)
A pinch of salt
For the kala Chana/ black gram Patties:
1 1/2 cups boiled and drained black chana/ gram
1/2 small yellow onion, finely chopped
1 small clove garlic, finely chopped
1 cup bread crumbs
1 tbsp finely chopped coriander leaves
1 teaspoon cumin powder
1 1/2 tsp chili powder
Salt as per taste
1teaspoon freshly ground black pepper
For the sliders:
16 slider buns or dinner rolls, sliced in half
1/2 red onion, sliced ( optional )
Cooking oil for shallow frying
To Make the spicy mayonnaise:
Mix all ingredients together in a small bowl. Refrigerate in an airtight container until ready to use.
TO Make the Patties :
Place beans in a bowl and mash with a fork or potato masher. Add all the other ingredients and Mix well.
Form the Patties -about 2 tablespoons per patty – by rolling mixture into a ball, packing together firmly, then flattening slightly.
Add the oil to a large pan over medium heat. Working in batches so that the burgers aren’t too crowded, cook one one side until browned – about 5 minutes, then carefully flip and cook until browned and cooked through, about 10 minutes total.
Remove patties to a paper-towel-lined plate to drain and cool slightly.
TO ASSEMBLE THE SLIDERS
Put slider buns sliced-side up on a cookie sheet. Add the cooked patties to the bottom halves of the buns and top with
cheese. Place under oven broiler until cheese has melted and buns are golden brown, about a minute watch carefully
Remove from oven and apply spicy mayo on the inside of the bun tops. Top burgers with red onions and sandwich with the bun top .
Secure with a toothpick or skewer.
Serve the sliders …
You can even make these patties a few days ahead of the party
Form patties, place them on a cookie sheet, cover with plastic wrap, and freeze until ready to cook.
