Ratlami Sev is very famous savoury snack from the city of Ratlam in Madhaya Pradesh. Sev ( deep fried gram flour noodles ) is made from gram flour and pepper and are famous for their spiciness. Ratlami sev is easily available in Indian grocery stores….
Prep time: 5 mins , Cook time:10 mins , Total time:15 mins
Tomato – 1 cup chopped
Onion – 1/2 cup, finely chopped
Ratlami sev – 1cup
Garlic – 1 tsp, finely chopped
Ginger – 1 tsp, finely chopped
Dried Red chili – 1
Oil – 2 tbs
Cumin seeds – 1tsp
Asafoetida (hing)- 1/4 tsp
Turmeric powder (haldi)- 1/2 tsp
Coriander powder- 1 tsp
Red chili powder- 1 tsp
Fresh cilanto for garnishing
1 lime or lemon cut in wedges
Salt to taste
Heat oil in a pan and add cumin seeds, once it is tempered add ginger, garlic, green chili, asafoetida (hing).
Add chopped onion and cook till it becomes translucent.
Add turmeric powder, coriander powder, red chili powder, salt and stir it.
Add the chopped tomato and cook till the become soft. Add little water to it.
Once the tomato onion gravy is cooked, add Ratlami sev just before serving . This way the Sev won’t get soggy and taste much better.
Serve hot garnished with fresh cilantro , lemon or lime wedges & chapati or parathas
