Foolproof Holiday Peppermint Fudge …..


Fudge is a Western confectionery, which is usually soft, sweet, and rich. It is made by mixing sugar , butter and milk and heating it to the soft stage at 240 *F/116 *F, and then beating the mixture while it cools so that it acquires a smooth, creamy consistency.

The most popular fudge flavor is chocolate .
Fudge can be made plain or it may contain walnuts, almonds, pistachios or pecans, mini-marshmallows, raisins, dried red tart cherries or other dried fruit and orange peel. Fudge can be flavored too with extracts such as mint, lemon and orange.

Today I bring to you one of my all time favorite easy to make 5 mins Chocolate fudge with candy cane topping …

Prep: 5 min
Inactive: 2 hr
Cooking time : 5 min
Yield: Around 10 to 12 servings

Ingredients :

3 cups semisweet chocolate chips

One 14-ounce can sweetened condensed milk
1tsp vanilla extract OR mint extract if you like stronger mint flavor Cooking spray, for spraying the foil OR wax paper..

Handful crushed Candy Canes or peppermint candies of your choice for topping..


Line an 8-inch square baking pan with Wax Paper Or foil paper . If using foil then spray the foil with cooking spray.

In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk and stir until it’s all melted and smooth.
Pour it into the prepared pan and spread to even out the surface. Sprinkle the crushed candies on top .
Refrigerate for 2 hours or until set .

Lift the foil out of the pan and peel it off the fudge. Cut into small squares.


COMBINE chocolate chips with sweetened condensed milk in 1-quart glass measure. Cook on HIGH (100% power) 3 minutes ( 1 min at a time and stirring in between ) or until chips are melted.
Pour it into the prepared pan and spread to even out the surface. Sprinkle the crushed candies on top .
Refrigerate for 2 hours or until set .

Lift the foil out of the pan and peel it off the fudge. Cut into small squares.


Dulce De Lech. & Rose flavored Cashew Burfi / fudge .


Holiday season is in full swing in India and with Dewali right around the corner we all look for some easy and quick to make Indian sweets . Today I am bring to you one of the most popular and loved By most ” Kaju Kathli” WITH a twist . Instead of using regular condescend milk , here I have used Dulce De Lech as well as rose flavoring. Recipe for DDL AKA Dulce De Lech can be found HERE

This is a very easy recipe and you’ll never have to run to the sweet shop again ! If you want to make regular kaju katli then you can replace DDL for regular condensed milk …

You need a can of Dulce De Leche (14oz)
1 tsp ghee / clarified butter
300 gm. ground kaju / cashew nuts
1 tsp rose (essence). OR vanilla essence
Some dried rose Petals
1 tsp of ghee for greasing a plate .


Place Dulce De Leche , ground cashew /kaju , ghee and essence in a wok or karahi and mix well. Turn the heat on and cook, stirring all the time, until the whole mass begins to come off the wok & starts looking like a dough .

Grease a flat tray with a very thin layer of ghee or butter.
Turn it out onto the tray and spread evenly. Smooth out any irregular bits with a flat spatula.
Sprinkle dried ross Petals
Allow to cool completely.
Cut into any shapes of your choice or diamond shapes or squares.
Now gently lift each burfi/ sweet out with the help of a spatula or knife and keep in an airtight box, separating each layer of burfies with waxed paper or foil. Otherwise, they may stick together.

Note :

Powdering the cashew is best done in a coffee grinder or dry-grinding. The blender/mixie does not do a very good job and it needs to be a imageimagefine powder.

Home made Dulce De Leche… Heaven In A Can …


Do you happen to have a can of sweet condensed milk lying around in the house and do not know what to do with it ??

Now you can make Dulce De Leche out of that Can. Ddl is sweetened condensed milk which has been caramelized in its own can . DDL tastes something between caramel & butterscotch…

Process is very simple to prepare this at home …

We will be needing minimum 3 liter pressure cooker for this . Fill the pressure cooker with water up to its max fill line.

Remove the label from the can of sweetened condensed milk. Set the can on its side in the water . The can must be completely submerged in water .

Close the pressure cook with its lid .

Bring up to pressure over high heat. Once the cooker has reached 1 whistle or pressure, reduce heat to medium low , just to maintain pressure.

Pressure cookers will make a hissing sound at this stage, without any more whistling .

Cook for 30 minutes.

Turn off the heat and wait until it cools down completely. While the cooker is pressurized by the steam, its pressure will counter balance the pressure build up inside the can, and prevent it from exploding.

Let everything cool down before opening the pressure cooker .

You must let the can cool for about an hour before you open the can & enjoy this great dessert.

Home made Mango And Strawberry Ice Cream …

This is a fantastically easy recipe for Fruit Ice creams . This is creamier than other ice creams with full of fruit flavor. Quick and simple to make too. All you need is a blender or whip with your hand . Makes a beautiful dessert to serve , easy too, since you can make it well in advance. Delicious as is, or serve with slices of fresh fruits and a little liqueur drizzled over . ENJOY!

Ingredients :

2 cups heavy Whipping Cream
2 Cups fruit pulp of your choice
2 Cups of to taste Condensed Milk

Method :

Chill cream & condensed milk overnight.
Beat cream with blender or hand till fluffy.
Start adding condensed milk & pulp & keep beating.
Freeze till Set and enjoy !!!
