Mango burfi or Mango Milk fudge bars !!

Mango is the national fruit of India and is crowned as the Kind of all fruits . Mangos are used to make pickles, milk shakes, desserts, ice creams, smoothies, pies, juices and a lot more different edible items. Not only this, the leaves and the fruit of mango is even used ritually for decorations at public celebrations, ceremonies and even weddings in different culture in India .

Today I am sharing one of my favorite Mango Sweet known as Mango burfi or Mango Milk fudge bars

To prepare this we will need

250ml mango pulp (3-4 mangoes pureed) or market bought Mango Purée

100 ml condensed milk

100 ml double cream / heavy cream

½ tsp freshly ground cardamom powder

180 gms milk powder

8-10 pistachios coarsely crushed

Method :

Line a flat dish with wax / parchment paper. Sieve the milk powder to get rid of all the lumps. Add all the chopped mango to a blender and blend to a smooth puree. Strain the puree through a sieve to get a thick mix. If you’re using ready mango puree just add to a bowl.

Add the condensed milk to the mango puree and mix well. In a medium pan add the mango and condensed milk mix and bring to a boil. Simmer stirring frequently on a low heat for 10-12 mins. The mix will reduce slightly. Add the double cream / heavy whipping cream and continue cooking for another 15 minutes. Also add the ground cardamom powder. The barfi / fudge mix will thicken. Using a whisk and working quickly add the milk powder; a few tablespoons at a time. Whisk well until all the milk powder has blended in. ( I used the hand blender ) Keep the heat on low and stir to make sure there are no lumps. The mix will start leaving the sides of the pan and form a smooth dough.
Set the barfi/ fudge in the wax/ parchment paper lined flat dish, smooth out the edges and sprinkle pistachios on top . Cool and set in the refrigerator for 2-3hrs or preferably overnight. Cut into squares and serve.
