Stuffed Mushrooms – Diabetes Friendly Thursday…..

Experts says that mushrooms are good for diabetics as they contain next to none sugar .They contain 2g of carbs in a 50-gram portion. One-half cup of raw sliced white mushrooms contains 2g of carbs.

Mushrooms are extremely dense with nutrients, including selenium, a trace mineral that may help fight cancer. They are also rich in antioxidant and anti-inflammatory nutrients, and may help prevent cardiovascular disease.
These stuffed mushrooms are a restaurant worthy appetizer which are diabetic friendly, quick to make, bursting with flavors and last but not the least next to non carbohydrates .

Time : 25 mins
Preparation time : 10 Mins
Cooking Time : 15 Mins

Ingredients

200 grams button mushrooms
Olive oil / cooking oil for spraying
11/2 tbsp crumbled feta cheese / Paneer / Tofu
1 tbsp chopped fresh Cilantro/ Coriander leaves
Salt as per taste .. I did not use any as feta is naturally salty
1/4 Tsp red chili flakes /powder or as per taste

Method :

Preheat oven to 425°F.
Lightly coat medium baking dish with oil spray.
Remove stems from mushrooms by gently twisting until easily removed from mushroom top.
Place caps in medium baking dish, stem side up. Set aside.
Chop stems very fine and place in separate mixing bowl.
Add cheese, cilantro and red chili powder to stems. Mix well.
Evenly spoon mixture into reserved mushroom caps, mounding filling onto each.
Bake for 12 to 15 minutes, or until tender.
Allow mushrooms to cool slightly before serving.
